Nutritional Consultancy for Restaurants, Catering and Vending Companies

We provide consultancy to restaurants, catering companies and vending operators in the following areas:

• Nutritional assessment of menus and products offered.
• Nutritional improvement of product ranges and menus.
• Calculation of nutritional composition and use of nutrition and health claims to promote products and menus.

The consultancy service is aimed at restaurants, catering companies and vending operators seeking to:

• Improve the nutritional quality of their product ranges and menus.
• Design vegetarian and vegan menus for restaurants and catering services.
• Provide customers with nutritional information about menus in restaurants and catering services.
• Use nutrition claims to promote products and menus, such as “high in fibre” or “contains vitamins that support the immune system”.

The research group has expertise in the following areas:

• Applying international scientific criteria to assess the nutritional quality of food products and determine whether they are healthy or less healthy.
• Applying regulations governing the sale of food and beverages according to their nutritional composition, such as Decree 84/2018 of the Valencian Regional Government.
• Nutritional assessment and improvement of restaurant menus.
• Assessing compliance with legislation on nutrition and health claims (Regulation (EC) No 1924/2006).
